Sweet & Spicy Homemade Quick Pickles

I recently met someone who did not know that pickles were made from cucumbers! And honestly, for years, I walked past the little pickling cucumbers at the market and never gave them much thought either. But not long ago someone gave me a big bag of the cute little pickling cucumbers, and now I am in love with these Sweet & Spicy Homemade Quick Pickles!

I like the balance of the sweet and hot flavors, but you can easily adjust the recipe to your preference. My husband loves hot and spicy foods, so if he were the only one eating these, I’d double the peppers! To increase the spiciness you can also chop all or some of the peppers prior to adding to the jars. If you want to reduce the sweetness, just reduce the sugar by a half a cup or more. And you prefer a less vinegary brine, replace 1/2 cup of each vinegar with water. Play around with the recipe and find your favorite balance! That’s what we did to create these Sweet & Spicy Quick Pickles!

This recipe is enough to fill two 16 oz glass canning jars. Be sure to pack the cucumbers in the jars. They will shrink considerably after the brine is added and has cooled.

Sweet & Spicy Quick Pickles

These Sweet and Spicy Quick Pickles make a great snack, sandwich topper, or a nice addition to a charcuterie board.

Equipment

  • 2 – 16oz Canning Jars, or other glass containers

Ingredients
  

  • 5 cups pickling cucumbers, sliced 1/4 inch think approximately 5-6 small cucumbers
  • 1/2 red onion, thinly sliced
  • 5-10 red bird Thai peppers can also use jalapeño or serrano peppers
  • 5-10 garlic cloves, whole
  • 4 tsp pickling spice
  • 2 cups cider vinegar
  • 2 cups white vinegar
  • 2 1/2 cups sugar
  • 4 tsp salt

Instructions
 

  • Combine the sliced cucumbers, sliced onion, whole garlic and chili peppers. Divide and pack into two 16 oz glass jars.
  • Divide the pickling spice and add half to each jar.
  • Combine the vinegars, sugar and salt in a medium saucepan. Bring to a boil, reduce heat and simmer for 5 minutes, ensuring all of the sugar and salt are dissolved.
  • Pour hot liquid into glass canning jars to fully cover the cucumbers.
  • Cool slightly, cover tightly and refrigerate a minimum of 3 hours prior to serving.
